Cheese with strong character, with the aroma of wild grasses. It is obtained from whole goat’s milk from flocks roaming free in the pristine pasturelands of Sardinia.

Cylindrical shape, with flat top and bottom and slightly convex heel. The rind is characteristically black and/or brown in colour, smooth and thin. Medium-hard cheese, white tending to straw yellow, compact or with small eyes. Its mild and aromatic taste, intense aroma, and the high quality of the milk used make this cheese one of the most prized products of OP Unione Pastori.

Goat’s milk, salt, goat rennet, lactic starter.

50 days minimum.
