A delicate cheese with a mild aroma and flavours of the Mediterranean maquis. It is obtained from whole goat’s milk from flocks roaming free in the extensive open pasturelands of Sardinia.

Soft cheese. Cylindrical round shape, with flat top and bottom and straight or rounded heel. The rind is straw-yellow. The paste is soft and elastic, slightly straw-yellow, compact or with small eyes. This cheese has a pleasant mild taste, slightly aromatic.

Goat’s milk, salt, calf rennet, lactic starter.

20-30 days minimum.

Diameter 14-16 cm. Height 8-10 cm. Weight 0.5-1.5 kg.
