A delicate cheese with a mild aroma and flavours of the Mediterranean maquis. It is obtained from whole sheep’s milk from flocks roaming free in the extensive open pasturelands of Sardinia.
Soft cheese. Cylindrical round shape, with flat top and bottom and rounded heel. The rind is straw-yellow. The paste is soft and elastic, slightly strawyellow, uniform or with small eyes. It has a pleasant mild taste, slightly aromatic.
Sheep’s milk, salt, calf rennet, lactic starter.
60 days minimum.
