A delicate cheese with a mild aroma and flavours of the Mediterranean maquis. It is obtained from whole sheep’s milk from flocks roaming free in the extensive open pasturelands of Sardinia.
Fresh cheese, soft and elastic. Cylindrical round shape, with flat top and bottom and straight or rounded heel. The rind is thin, smooth and strawyellow. The paste is slightly straw-yellow, compact or with small eyes. Soft cheese with a pleasant mild taste, slightly aromatic.
Sheep’s milk, salt, calf rennet, lactic starter.
20-30 days minimum.
Diameter 14-16 cm. Height 8-10 cm. Weight 0.5-1.5 kg.
